Square JRPGs have moogles, tonberries, chocobos, etc.
Dragon Quest has their iconic take on slimes.
Tales of games have new cute animal mascots & spirits each game.
Breath of Fire... I'm less familiar with >__>
Things like Langrisser and Fire Emblem less so, because they're strategy RPGs

The point is, lots of long running JRPG franchises have some iconic elements beyond just returning characters that help them be recognizable and accessible to the audience, and also help with marketing and merchandising :P

Beyond maybe Cores.... what would you say Lufia has in this regard? It's got a lot of generic RPG enemies like goblins and orcs and dragons and whatnot, lizards and slimes, etc, but I can't think of anything off the top of my head that immediately stands out.

I can't say I've played the whole series but to me, the most iconic thing of Lufia II is not a creature. However, it's present in each episode, like iconic creatures in other series. What I talk about is obviously the Ancient Cave.
Thanks to Neverland for Lufia II

Aye, I agree on the Ancient Cave.
When I saw the title, I instantly thought of capsule monsters as well.
